this cheese if OFF THE HOOK GOOD!  jersey milk rubbed with spices...really....try it!

~FIRM~

Super Aged Gouda, Winchester, CA
raw cow's milk, vegetarian rennet, 
aged at least 1 year, tart and crunchy

~BLEU CHEESE~

Bayley Hazen Blue Greensboro, Vermont 
pasteurized cow’s milk, intense and grassy

Smokey BLue, Central Point, Oregon 
pasteurized cow's milk, smoked over hazelnut shells for 16 hours
